Soft & Chewy Cake Batter Waffle and ice cream, & fiber goals 

This waffle turned out to be a really great texture– like warm cookie dough 🍪.  And I combined with my protein ice cream 🍦 fluff for a macro-friendly waffles n cream for dinner combo

Waffle recipe:

  • Measure out 29g of Lions Pack vanilla Cake batter Muffin mix (I think you could use any type of Muffin mix that is a “just add water” mix)
  •  7g of coconut flour
  • Mix it with just enough water to make into a pudding type of batter
  • Cook in waffle maker!

Macros for the waffle: 7p, 15.5c, 1.5f (104kcal)

Ice cream recipe:

  • 1 scoop protein powder
  • 2c ice
  • 1c water
  • 1/2tsp xanthan gum
  • 1/4tsp guar gum
  • Blend it all well until fluffy & creamy 🙂

Macros for ice cream: 24p, 2.8c, 1.5 f (120kcal)

Bonus fluff from today’s eats: the Lions Pack Oreo cookie dough is really good– great macros too. And the mini-me’s I find at Kroger- GF rice cakes covered with chocolate 🍫

Most of my protein macros do come from my ice cream! One thing I’ve learned with IIFYM is that the source of protein/carbs/fats doesn’t matter. The point is to use foods you like to hit your macro goals each day.

Some people have a fiber goal. I get fiber goals as well from my coach (usually 20-30grams) but I actually tend to go over! So, for me, I have been finding ways to include more “fun” carbs & cut down the Amt of veggies i use.  I used to down about 5-8lbs of fibrous veggies a day, and am now back to a lower amt– like 2-3lbs. (A couple plates of veggies a day– I like to use mushrooms, zucchini, and lettuce).

Too much fiber also causes issues:

“… if your fiber intake exceeds your daily recommendation or if you suddenly start eating too much fiber, it can result in abdominal pain, bloating, diarrhea, or even constipation.” – source

I think not getting enough fiber is more common, but I did notice some of the above issues when my fiber was really high. Just didn’t occur to me it was from too much fiber until my coach pointed it out.
