So I’ve seen recipes for an ice cream mug cake before, but most of them require cake flour & regular ice cream. So I took that general concept but tried to make it a bit more macro-friendly & gluten free !
- 1/8tsp baking powder
- 7grams (1tbsp) of coconut flour
- 40grams of melted Halo Top ice cream (I used Black Cherry 🍒 here, but they have several different flavors!)
- Mix all ingredients together.
- Microwave for 60seconds
