3-ingredient Ice Cream Mug Cake

So I’ve seen recipes for an ice cream mug cake before, but most of them require cake flour & regular ice cream. So I took that general concept but tried to make it a bit more macro-friendly & gluten free !


Macros:


Ingredients: 

  • 1/8tsp baking powder
  • 7grams (1tbsp) of coconut flour 
  • 40grams of melted Halo Top ice cream (I used Black Cherry 🍒 here, but they have several different flavors!) 



Directions:

  • Mix all ingredients together. 
  • Microwave for 60seconds
  • Enjoy!
