Fluffy Blueberry Protein Waffle & a Note on Food Label Macros/Calories

Super Fluffy Blueberry Belgian Waffle with a soft crunch on the outside. πŸ˜‹ 

-Gluten free, 3 ingredients, macro-friendly. My favorite combo! πŸ™ŒπŸΌ. These waffles were inspired by my friend Alison & blueberries. They were perfect as a post workout today πŸ’ͺ🏼 

The recipe makes a Full Belgian Waffle! It had a little crisp on the outside too, making it the perfect texture.  πŸ‘ŒπŸΌ 

Recipe & Directions: 

  • 1/3cup (40grams) GF Martha White Blueberry muffin mix (found at Kroger) 
  • 1scoop (28g) Devotion protein powder
  • 2tbsp (14g) coconut flour 
  • Enough water to make a pudding-like batter 
  • Cook in waffle maker! 

I topped it with a bit of Walden farms syrup πŸ˜‹

Bonus Postworkout Food & a note on food labels  — technically this waffle was my second postworkout meal , my first was a cookies and cream quest bar (I needed something to eat while I was shopping for the blueberry mix a Kroger ) …. quest bars are great for helping me hit 35-40g of fiber a day! 

Don’t believe the calories on the label though. 

The bars are actually 40-60kcal more than advertised (most bars are). They subtract the calories from fiber. So if a bar has 14g fiber (like this one), the nutrition label will say it’s 56kcal LOWER than it actually is. πŸ™„ (14 fiber x 4kcal/g =56kcal).  

That means this bar is actually 245kcals NOT the 190 it says on the label. 

I used to be upset at the quest bars for this until I began to see it everywhere! I realized it’s not quest’s fault- it’s the laws on labeling. I really don’t like it, but it does make macro-counting more logical than calorie-counting.  

It’s one reason I really like the my.macros plus app as well– they have set it up where it used the products macros to total the calories. Whereas myfitnesspal has the label’s calories and macros (it frustrated me when I would hit my macros but the calories didn’t match).
