Pulled chicken BBQ pepper jack waffle sandwich 

“Pulled Chicken Pepperjack BBQ Waffle Sandwich” — an easy #glutenfree savory waffle sandwich!

So I have a massive sweet tooth, but my husband is pretty much the opposite! Sometimes I try to make #food for him too. He doesn’t count #macros – he’s one of those genetically-blessed people who can eat whatever he wants 🙄😠 & lose weight. #notfair ….. but I did figure out the approximate macros for this Waffle Sandwich I made for him to share here:

Recipe: makes 2 sandwiches :

Make waffle first:

  • 106g protein pancake mix (I used gluten free flapjacked brand)
  • 1 egg
  • 1/4cup water
  • Mix and cook in preheated/greased waffle iron

Cut waffle (or break) in half and Add sandwich filling:

  • 4oz chicken (2oz per sandwich)
  • 2slices pepper jack cheese (1 per sandwich)
  • 2 tbsp BBQ sauce (1/sandwich)

Enjoy!! Save by refrigerating!

    1. Hi Carrie! I just used regular pepper jack cheese from Kroger and their BBQ sauce! It’s just 1tbsp sauce which limits the sodium/sugar. They’re probably some healthier options out there, but this is what we had at our house!
