GF Blueberrylicious & Oat Waffles, New Protein Ice Cream Recipe (no xanthan gum), and Vegan Birthday Breakfast cookie dough bites

After a run, this warm waffle and protein ice cream hit the spot! Both of these combined for 462 kcals (waffle was 350kcals total) 55grams protein, 47 grams carb (10grams from Fiber), and 6 grams of fat!  The gluten-free protein waffle is just 4 ingredients and full of fiber, and the ice cream is a modification of my all-time favorite protein ice cream recipe.  It makes the same volume and same creaminess but none of the xanthan gum bloat that I am trying to get away from as I posted here – I thought I needed to give it up, but this is all new life to my ice cream game!

Blueberrylicious Oat Waffle

  • 35 grams (about 1/4cup) Protein pancake mix (I used Blueberry SlapJacks – code REBEKAH saves you 10%)
  • 35 grams (about 1/4cups) quick oats (I used Quaker gluten free)
  • 7grams coconut flour (1 tbsp)
  • 1/2cup egg whites
  • 1/4 cup water

Mix and pour into greased waffle maker! Cook 3 minutes or until done (IT FLUFFS up and the outside crisps up a little, so it’s perfection basically)


That’s my basic recipe above!  But I’ve found that all I need to do is nix the xanthan gum and use guar gum in place of it! And SAME results- still 32 ounces and SUper Creamy! WooHoo.  It’s 110 kcals with 24grams protein and 3g carbs… 

  • you can use any protein powder in this recipe, I used Slap Whey Iso. (code REBEKAH saves you 10% on it)

One of my instagram friends also recommended using glucomannan powder which looks interesting to me.  It’s marketed typically as a weight-loss product and used in foods like the low-cal noodles I’ve had before at stores.  It’s also a prebiotic and helps lower cholesterol.  So I may give it a shot! 🙂

Then Pair the two together for the amazing and HEALTHY waffles and ice cream combo.

    1. I have found i prefer using 1/2tsp xanthan and 1/2tsp guar the best! But yes- using 3/4tsp guar also works if you’re sensitive to xanthan. I have found that I’m fine with the xanthan as long as i dont eat more than 1bowl a day. Lol
