Gluten Free Protein Pumpkin Cheesecake Waffle and 21 Minute Workouts/Lifts for Runners

I took a much needed rest day today, and modified my pumpkin pie waffle from  the other day to make a ‘pumpkin cheesecake’ version! 🙂

  • Macros for the waffle are: 234kcals, 33g protein, 20g carb, 2.5g fat

I also finished filming and putting together my workout demos for my new workout plan.  I put these 21minute workouts together for myself to use as I go back to work and begin training for a marathon this December, and figured I’d share them on here as well for anyone else interested! 🙂  You can read more and get the PDF with the workout plan here!


Gluten Free Protein Pumpkin Cheesecake Waffle RECIPE:

Mix ingredients together and cook 3-4 minutes in a preheated/greased waffle maker — this should also work as pancakes! 🙂 

  • 1 scoop (30 grams) protein powder (I used Slap Whey Protein – code REBEKAH for discount)
  • 1/3 cup water
  • 2 tbsp (14g) coconut flour
  • just under 1/4cup (50grams) pumpkin
  • 3 Tbsp (46grams) egg whites
  • 1/4 box (8grams) sugarfree cheesecake jell-o pudding mix
  • cinnamon

Along with my waffle, I made some protein Ice Cream :) and topped it off with some raisinets! 🙂
