JUMBO Gluten Free Banana Bread Protein Muffins- 316kcal, 6 ingredients

I didn’t realize how well these would work out! These muffins are the size of a large bakery muffin and are just 316kcals. Each has 14g protein 44g carb and 9g fat. This recipe does exceed my self-imposed 5-ingredient limit, but they are worth it!

When I set out to make these, I had Chris in mind – meaning I made them to have great taste & be a little healthier than regular banana bread by adding in protein. I also wanted them to be gluten free so I could lick the batter from the bowl 🤣.

These are identical in size to the Lenny & Larry muffins (in photo above), but are gluten-free !

The Ingredients are listed below for a large batch of 16, & then for a single serving!


RECIPE:

  • Preheat oven to 350 & grease 16 muffin slots in a tin
  • Mix the following in a Large bowl:

➡️ 1 box of King Arthur GF Banana bread mix,

➡️ 1cup melted peanut butter (I used Jif Crunchy),

➡️ 1cup Quaker GF quick oats,

➡️ 4scoops (approx. 1 heaping cup) protein powder – I used IdealFit Unflavored protein baking mix (similar to Quest Unflavored mix) but any unflavored/vanilla powder should work,

➡️ 1.5cups egg whites,

➡️ 1cup sweetened condensed milk (I used Wegmans Organic)

➡️ ~3/4-1cup water – this may vary – I just went for a smooth pudding-like consistency

  • Scoop out batter and fill in 16 Muffin tin slots to the top (like photo above)
  • optional: add toppings- I used Candied pecans (not included in macro total)
  • Bake for 20ish minutes or until golden on edges and solid in middle.

Enjoy!! Refrigerate leftovers :).


Single Serving Ingredients :

  • Follow directions above, but use the following ingredients:

➡️ 3Tbsp of King Arthur Banana Bread mix

➡️ 1 Tbsp melted peanut butter (I used Jif Crunchy),

➡️ 1Tbsp Quaker GF quick oats,

➡️ 1Tbsp protein powder – I used IdealFit Unflavored protein baking mix (similar to Quest Unflavored mix) but any unflavored/vanilla powder should work,

➡️ 1.5 Tbsp liquid egg whites,

➡️ 1 Tbsp sweetened condensed milk (I used Wegmans Organic)

➡️ 1Tbsp water

➡️Optional: Add toppings or mix-ins

The single serve are great because you can eat the whole batch! I make it the night before when I use it as my preworkout breakfast.
